GF/DF Toffee Bars

These delicious treats taste as though they’re hard to make, but they’re super-easy. They’re a great way to add a homemade touch to the holiday season, even if you’re not an avid baker. Or…make them with the kids!

Ingredients:
 

  • 1 cup dairy-free “butter”, softened

  • 1 cup packed brown sugar

  • 1 tsp vanilla extract

  • 1 egg yolk

  • 2 cups gluten-free 1-to-1 flour blend

  • ¼ tsp salt

  • 1 cup semi-sweet chocolate chips

  • ½ cup chopped nuts (optional)
     

Directions:
 

Heat oven to 350 degrees Fahrenheit. Grease a 13”x9” baking pan.
 

In a large bowl, cream together the dairy-free butter, brown sugar, vanilla and egg yolk.
 

In a separate bowl, mix the flour and salt. Add the dry ingredients to the wet ingredients and mix well.
 

Press the mixture into the bottom of the prepared baking pan.
 

Bake 25 to 30 minutes or until very lightly brown. (The crust will be soft. That’s okay.)
 

Immediately sprinkle the chocolate chips over the hot crust. Let stand about 5 minutes or until the chocolate is soft. Spread evenly over the crust. Sprinkle with nuts (if using).
 

Cool for 20 t0 30 minutes. While it’s still a bit warm, cut into bars. (You should be able to cut 4 rows by 8 rows to give you 32 bars.)
